KILLIK rum
What is 'hogo' or 'high ester'?
Originally a Jamaican style, hogo is an easily identifiable flavour which is the result of wild fermentation. It is commonly characterised by its potent, funky nose and taste. It can be very difficult to define and can vary wildly. In the case of KILLIK, it is often very fruity with strong hints of tropical fruit, over-ripe bananas, strawberry and a distinct milkiness.

KILLIK Spiced Rum
What is KILLIK Spiced Rum?
KILLIK Spiced Rum is a blended rum made with carefully selected rums from around the world, combined with KILLIK rum produced here in Australia.
The rums are aged between four and eight years before being blended with spices in Australia. It is lightly back-sweetened, not enough to make it a sweet rum or liqueur, but just enough to give it a soft, approachable finish.
The spice profile is fairly traditional, avoiding the overly sweet, vanilla-heavy style of many modern spiced rums.
What spices are included?
While this rum contains classic spiced-rum notes of vanilla, ginger, allspice, and clove, its defining spice is black cardamom. Unlike the brighter, sweeter green cardamom commonly used in desserts and chai, black cardamom is a larger, darker pod traditionally dried over open fires. This gives it a smoky, earthy depth, while still carrying cardamom’s distinctive mentholated, almost medicinal spice character. It brings a savoury warmth and complexity that sets this rum apart from more vanilla-heavy modern spiced rums.
Tasting notes & serving suggestions
Tasting notes: KILLIK Spiced Rum is soft, rich and warming, with classic notes of vanilla, ginger, allspice and clove. Its defining spice is black cardamom, bringing smoky, earthy depth and a subtle mentholated spice character that keeps it complex without becoming a sweet vanilla bomb.
How to serve: KILLIK Spiced Rum is delicious over ice or with cola, but it really shines in simple highballs where the spice can open up. Try it with dry ginger ale, fresh lime and plenty of ice.
Spiced Rum Highball: 45ml KILLIK Spiced Rum, 120ml dry ginger ale, a squeeze of fresh lime. Build over ice and garnish with a lime wedge.
